  • 2 cups egg
  • 400 grams grated coconut
  • 3/4 cups palm sugar
  • 3 pandanus leaves
  • 3 small pumpkins

  1. With a small, sharp pointed knife cut 6 pointed star-shaped opening around the stems of the pumpkins. Lift the stems and remove seeds and membrane from the insides.
  2. Mix 1/4 cup warm water to coconut. then squeeze out 1 1/2 cups coconut milk. 
  3. Mix sugar with egg, beat with pandanus leaves for about 10 minutes, then continue beating, adding the coconut milk. Strain through cheesecloth into the pumpkins, filling them to within about 1 inch from the top.
  4. Support the base of each pumpkin in a bowl of the same size, place in steamer tray, putting the pumpkin stems beside the bowls in the tray, and steam over vigorously boiling water until cooked.
