Ingredients of Thai Banana and glutinous rice steamed in banana leaf dessert menu.

  • 1/2 kg. glutinous rice (soaked or un-soaked)
  • 300 grams grated coconut
  • 1/2 cups sugar
  • 2 tbsp. salt
  • 10 bananas
  • 1 cup black beans, boiled until soft
  • 1/2 kg. banana leaf

  1. Wash and drain the rice.
  2. Mix 1 cup water with the coconut and squeeze out 2 cups coconut milk.
  3. Dissolve the sugar and salt in the coconut milk and strain into a brass pan add the rice, then cook over low heat with constant stirring until mixture is dry.
  4. Peel the bananas and slice in half lengthwise.
  5. Tear the banana leaf from edge to midrib into pieces 8 inches wide and place together in pairs so the midrib side of one is opposite that of the other. If desired, tie the packet, then steam for 45 minutes.
  6. If the rice has not been soaked, the packets must be tied securely and boiled for 1 hours.
